Sausage and Kale Soup

Directions:

  1. Heat oil in a Dutch oven over medium heat. In batches, brown the sausage. Remove to a separate plate. Pour off excess grease, return pot to heat.
  2. Add onions and cook for 3-5 minutes, or until translucent. Add garlic; cook 1 minute longer.
  3. Add potatoes, salt, pepper, bay leaves, tomatoes, beans, and chickpeas. Bring to a boil; cover and simmer for 20 minutes, or until potatoes are cooked.
  4. Turn off heat; discard bay leaves. Add kale and stir until wilted.
