Greek Chicken Couscous Bowl
Ingredients:
For the chicken bowl:
- 6 ounces chicken, precooked or leftover
- 1/2 cup couscous, cooked
- 1 cup (or 2 leaves) Romaine lettuce, shredded
- 1/2 cup cucumber, chopped
- 1/2 cup cherry tomatoes, sliced
- 1/4 cup red onion, diced
- 1/4 cup kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- Optional: pita bread
For the dressing:
- 1/2 medium lemon, juiced
- 1 tablespoon red wine vinegar
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon Dijon mustard
- 1/4 cup olive oil
- Black pepper to taste
Directions:
- Prepare couscous as per directions on the box. Set aside.
- In a mason jar with a lid, add dressing ingredients, and shake until well-combined, about 15 seconds. Set aside.
- Place lettuce in the bottom of a salad bowl. Layer on cucumber, tomatoes, onion, and olives. Drizzle dressing over the salad. Crumble feta cheese on top. Slice chicken into bite-size pieces, and lay on top.
- Serve at room temperature with pita if desired.
